In 2006, Stephanie and I began a quest to create a healthy snack for our 7 year-old son, Quinn. We loved the ease, convenience and portability of energy bars, but weren’t entirely thrilled with the uber-dense, pureed bars we found on store shelves. So we decided to start from scratch…
1) Solstice Bars had to be delicious enough that a picky kid would love ’em!
2) They had to be nutritious enough that picky parents would approve, with whole grains, fiber, anti-oxidants, omega-3’s, and protein.
3) They had to be both filling and provide energy, but without sugar peaks and crashes.
4) And just to keep things interesting, we wanted them to be vegan, use minimally processed ingredients (that Quinn could actually pronounce), and be mostly organic.
Easy stuff! Right?
Well, it took 11 tries, but in August of 2006, Quinn gave the thumbs-up to the Solstice™ Dark Chocolate & Peanut Butter Goji Bar. We wanted to share our discovery of a truly delicious and nutritious snack bar, so we began marketing Solstice™ Bars nationwide. In 2007, we expanded the Solstice™ Goji Bar family to include the luscious Dark Chocolate, Cherry, & Almond Goji Bar. We released the sophisticated Mochadamia™ Goji Bar in 2008.
As time went by, I heard customer after customer lamenting the lack of a truly delicious vegan crispy rice snack on the market. I also heard customers looking for delicious gluten-free snacks, often in vain. And people looking for lighter, lower calorie snacks that would actually satisfy. Putting two and two (and two) together, I thought “We could do that!” And a new quest was begun…
Solstice “Rice Hippie Snacks™” were born in 2010 with three flavors: Chocolate Mint, Lemon Ginger, and Cherry Dreamsicle. With just 100 calories per serving, vegan & gluten-free snacking had never been so delicious!
Just as “the hippies” hit the market, Stephanie decided that the world needed its first Thai-inspired savory snack bar. Sensing my biggest challenge yet, I set to work on the Solstice Thai Fusion bar, patterned after her beloved Pad Thai.
It took almost a year to perfect, but it was worth the wait: peanuts followed by savory ginger, garlic and onion; the sourness of tamarind and lime tickling the sides of your tongue; the slow burn of cayenne; finishing with the warmth of toasted sesame and a hint of lemongrass.
One tester exclaimed “It takes my taste buds on a journey!” And so it does…
Solstice™ Bars are still produced by hand in small batches and are available coast-to-coast/border-to-border at select Grocery Stores, Natural Food stores, Food Co-Ops, Health Clubs and Spas, as well as online at http://store.solsticebars.com.
